Today Chef Brian Cooks Tomato and Meatball’s Sauce.
Core 5 large tomatoes, place them in boiling water until the skins start to peel, then remove the skins and chop.
Then finely chop 3 cloves of garlic.
Dice a large onion.
And slice and dice a green capsicum.
That’s all the veg prepped and ready to go.
Into a pan, place olive oil, pepper, salt, the onions and garlic then fry them until light brown.
Add the capsicum.
Followed by the chopped tomato’s.
Then add a handful of lentils, tomato puree, and a handful of dried basil.
A splash of water and were ready for the frozen meatballs.
Simmer at 120 degrees for around an hour.
Absolutely delicious and feeds 4 people for just 7 riyals each.
